A Small Week of Eating

This past week, I kept things simple but delicious.

Last Thursday, I ended the day with three farm eggs, fresh orange slices, parsley, and farro. I LOVE eating like this. It’s clean, healthy, and so, so simple. It never makes me feel overly full and makes me feel refreshed. Later, for the first time, I made chocolate quinoa rounds to cease my chocolate craving. Find the recipe here: https://nadiashealthykitchen.com/chocolate-quinoa-bites/. I did not add the cashew butter, but just chocolate and puffed quinoa. They turned out perfectly!

On Friday, breakfast was two eggs with a sourdough waffle and an iced matcha (check out my “How I make my matcha”!) For dinner, my mom made us Philly cheesesteak sandwiches with grilled onions and bell peppers on homemade sourdough buns (thank you, Carly!).

Saturday was all about Judee’s. I got a honey matcha from there, ran some errands with the fam, and baked cookies—which always makes the day feel extra cozy. They turned out a bit flatter than I would’ve liked, but that made them perfectly crunchy.

Monday’s dinner was a hearty beef stew that my dad and I slow-cooked all day. The potatoes and beef were perfectly tender. (I wish I could share the recipe, but we made it up as we went, haha! We love cooking based on what tastes good in the moment.) I also made cornbread to go with it (delicious with the bone broth). But they were for the neighbors, so that’s an exception, right? Also, I had to try them to make sure they weren’t bad. 😉 You’re all probably wanting the recipe. Don’t worry. I’ll post it here soon!

Today (Wednesday), I stopped by CoffeeHead for an Earl Grey latte and a burrito (check today’s Adventure post for more on that). For dinner, I had a beef, Brussels sprouts, and bacon bowl—triple B!

Looking back, it was a cozy week of good food, homemade bread, and plenty of cookies, haha! Probably enough for the month, you think?
